Take your cottage cheese to a whole new level with just a few ingredients. This dish can be easily adapted to your own individual taste by adding more ingredients, if you wish.
16 oz. cottage cheese (1%, 2% or 4%)
1/2 - 1 c. fresh tomatoes, washed, cut in bit sized pieces
1/4 c. onion, grated, sliced or diced, your favorite (green onions, red, yellow, white, Vidalia)
1/2 - 3/4 large cucumber, washed, peeled, cut in bite sized pieces- English cucumbers are great in this salad
salt and pepper, to taste
In a medium size bowl, add cottage cheese and vegetables; mix well. Season with salt and pepper.
Serve chilled, in a bowl or on a bed of greens.
