This salad is a great one to serve in in the summer. It's easy to make, delicious and a beautiful salad to serve to guests. Substitute any berries or summer fruit that you prefer, like raspberries or blackberries. Add a little protein, crunch and more yum
Dressing:
1 c. strawberries
1/4 c. balsamic vinegar
1/4 c. extra-virgin olive oil
1 T. Dijon mustard
1 T. honey or Agave nectar
1 clove garlic, minced
1/4 t. salt
1/4 t. pepper
Salad:
5 oz. baby spinach
1 c. strawberries, sliced
1/2 c. blueberries
1/2 red onion, thinly sliced
1 sweet apple, cored, halved, and thinly sliced
1 c. candied walnuts or pecans, chopped
1/2 cup crumbled Gorgonzola or Feta cheese
Wash strawberries, blueberries, spinach, and apple. Drain well.
Dressing:
Push a straw through the strawberries from the bottom tip to the green top to remove the hull, or cut it off with a knife. Discard hull. Add the remaining dressing ingredients; in a blender or food processor, blend until smooth; refrigerate.
Salad:
Cut strawberries, apple, and onion into slices.
Combine all salad ingredients in a large bowl. When ready to serve, (and not before because spinach wilts easily) drizzle with desired amount of dressing; toss to coat.
Sprinkle crumbled Gorgonzola or Feta cheese on top. Serve.
