These potatoes are tasty little gems that make any meal really special. They are simple to prepare, beautiful to look at and taste fantastic!
8 medium potatoes
1/2 stick butter
1/4 – 1/3 c. heavy cream
1/4 t. garlic powder
1 t. salt
1/2 t. black pepper
1/4 t. nutmeg
1 c. grated sharp Cheddar cheese
1 egg, beaten
1 egg yolk
1/4 c. melted butter

Scrub potatoes, peel, cut in half or quarters, and cook potatoes in well salted boiling water until fork tender. Do not overcook. Drain; put back into the same pot over low heat; cook off some of the excess moisture.
Preheat oven to 375 degrees. Line a baking sheet with non-stick foil or parchment paper.
Mash still hot potatoes with butter, cream, and seasonings until smooth; stir in Cheddar cheese until well combined; stir in the beaten egg and egg yolk.
Place potatoes into a piping bag or a large baggie with the corner trimmed off. Using a large star tip if you have it, pipe into a circle stacking upwards as you go onto the prepared baking sheet. Brush lightly with melted butter; sprinkle lightly with paprika.
Bake 25-30 minutes, or until the edges start to turn golden brown.
