Everyone has 20 minutes to make dinner, right? So make this yummy chicken with bacon, BBQ sauce, and cheese topped off with tomato and green onion. Mmmmmm.
Ingredients
- 4 boneless, skinless chicken breasts
- 8 bacon slices
- ½ c. chicken stock
- 4 T. BBQ sauce
- 4 oz. Colby Jack cheese, shredded
- salt, to taste
- freshly ground black pepper, to taste
- 1 tomato, washed and diced
- 2 green onions, washed, ends trimmed off and sliced
Steps
- Wash chicken and pat dry with paper towels.
- Fry bacon in a large skillet until crispy.
- While bacon is frying, pound chicken to desired thickness. The thinner the chicken, the less cooking time required. Season with salt and pepper, if desired.
