This salad is phenomenal because it is super easy to make, is so light and full of flavor and is surprisingly delicious. Even people who say that they don't like carrots will love it.
1 lb. carrots, scrubbed and peeled
2 t. Dijon mustard
1 T. freshly squeezed lemon juice, from 1 lemon
1 1/2 T. vegetable oil
1 1/2 T. extra virgin olive oil
1-2 t. honey, or to taste depending on sweetness of carrots
1/4 t. salt
1/4 t. freshly ground black pepper, to taste
2 T. fresh parsley, chopped
2 scallions, finely sliced or 1 T. chopped shallots, finely chopped
Scrub and peel the carrots; grate in a food processor; set aside.
In a salad bowl, combine the Dijon mustard, lemon juice, honey, vegetable oil, olive oil, salt and pepper. Add the carrots, parsley and scallions; toss. Taste and adjust seasoning, as necessary. Cover; refrigerate until ready to serve.
Notes: If making this salad in advance, check the seasoning before serving since the flavors tend to mellow.
