Description
Enjoy this wonderful healthy pasta as a side or as the main dish. Serve it with a side salad and some garlic bread/toast.
Ingredients
- 1 lb. linguine or spaghetti
- 6 large ripe Roma tomatoes
- 4 green onions
- 3 large garlic cloves, minced
- 12 large basil leaves, thinly sliced, plus more for garnish
- 1/2 c. pasta cooking water, reserved
- 2 T. olive oil
- Parmesan cheese, grated
- salt, to taste
- black pepper, to taste
Steps
- Cook pasta to al dente in well salted boiling water according to package directions, about 9 minutes.
- While pasta is cooking, wash and dice the tomatoes; wash and slice the onions thinly.
- Place tomatoes with their juices, onions, basil, garlic, oil, salt and pepper, to taste in a large bowl.
