Bruschetta Pasta

Description

Enjoy this wonderful healthy pasta as a side or as the main dish. Serve it with a side salad and some garlic bread/toast.

Ingredients

  • 1 lb. linguine or spaghetti
  • 6 large ripe Roma tomatoes
  • 4 green onions
  • 3 large garlic cloves, minced
  • 12 large basil leaves, thinly sliced, plus more for garnish
  • 1/2 c. pasta cooking water, reserved
  • 2 T. olive oil
  • Parmesan cheese, grated
  • salt, to taste
  • black pepper, to taste

Steps

  1. Cook pasta to al dente in well salted boiling water according to package directions, about 9 minutes.
  2. While pasta is cooking, wash and dice the tomatoes; wash and slice the onions thinly.
  3. Place tomatoes with their juices, onions, basil, garlic, oil, salt and pepper, to taste in a large bowl.
