This messy looking cake is just plain delicious. It's rich, decadent and really easy to make. The nuts and the coconut will rise and the cream cheese mixture will sink, making what looks like a mess, but really isn't. That's why it's call an Earthquake Ca

Ingredients

1 c. flaked coconut
1/2 c. chopped walnuts or pecans

1 box German Chocolate cake mix ( Devils Food or Chocolate Fudge cake mix)
3 eggs
1 1/3 c. water
1/2 c. oil

8 oz. cream cheese, softened
1 stick butter, softened
1 t.. vanilla
2 c. powdered sugar

1 pkg. chocolate chips

cooking spray

Preheat oven to 350 degrees. Lightly spray a 9 x 13 inch pan with cooking spray.

Place the coconut and the chopped walnuts in the bottom of the prepared pan.

Mix cake mix according to package directions. Spread cake batter over the walnuts and coconut.

In a bowl, mix the cream cheese, butter, vanilla, and powdered sugar until fluffy; spread over the batter, keeping it 1 inch away from the edges. Sprinkle on chocolate chips.

Bake 50-60 minutes; cool. (The cake will look like it erupted, but it will not mess up the oven.)

Serve with Cool Whip.
