Description
This glazed meatloaf will be one of the best that you will ever make. It's made with ground beef and pork, onion, egg and breadcrumbs and glazed with jam, brown sugar, BBQ sauce and bourbon. Serve with your favorite sides.
Ingredients
- 1 lb. ground beef
- 1 lb. ground pork
- 1 egg, beaten
- 1/2 c. freshly torn or dried breadcrumbs
- 1/2 yellow onion, peeled and grated or minced
- 1 t. salt
- freshly ground black pepper, to taste
- Glaze;
- 1 c. fruit jam or preserves, like apricot, cherry or your favorite
- 1/4 c. dark or regular brown sugar
- 1 T. hot chili sauce or Sriracha, or to taste
- 1/2 c. bourbon, whiskey or cognac
- 1/2 c. BBQ sauce
- 1/4 c. water
Steps
- Preheat oven to 350 degrees. Line a loaf pan or a baking sheet with foil and spray with a non-stick cooking spray.
- Glaze:
- Place all glaze ingredients in a saucepan; stir to combine. Bring to a boil; lower the heat; simmer gently, uncovered, for about 10 minutes, until thickened. If a chunky jam was used, you may want to use an immersion blender to puree the glaze.
