Turn the traditional Caprese salad into a delicious panini using tomatoes, Mozzarella cheese, basil pesto and/or basil leaves and your favorite bread.
4 slices Panera® Tomato Basil bread, whole wheat or country-style bread
1/4 c. basil pesto, divided
6 oz. fresh Mozzarella, sliced
4 oz. Roma tomatoes, sliced
1/4 c. fresh basil leaves, optional
Heat panini press or non-stick skillet over medium heat.
Spread 1 T. pesto on inside of each slice of bread; spray outside with cooking spray; place a layer of cheese and tomatoes on 2 bread slices; top with remaining bread.
Toast in panini press for 3-4 minutes or skillet for 2 minutes per side.
Optional: place fresh basil leaves in sandwich.
