Description
Take your deviled eggs up a notch with avocado. You will need less mayonnaise to make them creamy and delicious. Make them vegetarian by using imitation bacon bits or leave them out completely.
Ingredients
- 12 hard boiled eggs, peeled
- 2 T. mustard
- 3 T. mayonnaise
- 1 large avocado, peeled and seeded
- 1-2 garlic cloves, finely diced
- 1 T. finely diced cilantro
- salt, to taste
- 3 slices of cooked bacon, finely chopped
- paprika, for garnish
Steps
- Slice cooled eggs in half lengthwise; scoop yolks into a bowl, setting aside the whites for later.
- Mash yolks and avocado together with a fork, stir in mustard, garlic, mayonnaise, and spices.
- Pipe or scoop mixture into the reserved whites. Sprinkle with bacon and paprika.
