Take your deviled eggs up a notch with avocado. You will need less mayonnaise to make them creamy and delicious. Make them vegetarian by using imitation bacon bits or leave them out completely.
12 hard boiled eggs, peeled
2 T. mustard
3 T. mayonnaise
1 large avocado, peeled and seeded
1-2 garlic cloves, finely diced
1 T. finely diced cilantro
salt, to taste
3 slices of cooked bacon, finely chopped
paprika, for garnish
Slice cooled eggs in half lengthwise; scoop yolks into a bowl, setting aside the whites for later.
Mash yolks and avocado together with a fork, stir in mustard, garlic, mayonnaise, and spices.
Pipe or scoop mixture into the reserved whites. Sprinkle with bacon and paprika.
