Baked Potatoes with Bacon and Cheese

Description

In about 1 hour, you can serve these wonderful sliced baked potatoes, loaded with cheese and bacon, seasoned with salt, pepper and red pepper flakes and garnished with freshly chopped parsley.

Ingredients

2 lb. small new potatoes
2 T. unsalted butter
salt, to taste
freshly ground black pepper, to taste
10 strips bacon, cut in pieces and fried until crisp
1 c. grated Mozzarella or Monterrey cheese
1 t. red pepper flakes
2 T. freshly chopped parsley

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

Scrub potatoes; dry; slice in halves; place on prepared baking sheet.

Put butter in a small bowl; melt in microwave for 20 seconds or more until it becomes liquid.

Drizzle butter evenly over potatoes; season with salt and pepper.

Toss to coat; arrange potatoes cut side up on the baking sheet. Bake 30 - 35 minutes until golden, piercing with a fork to check for tenderness.

When the potatoes are done, remove from oven; sprinkle the crisply cooked bacon, cheese, pepper flakes and chopped parsley on top.

Bake another 5 minutes or until the cheese has melted.

Serve.
