Description
This tasty dish comes together easily and quickly. Serve it with or over cooked rice or egg noodles and garnish with chopped green onions.
Ingredients
- 1 lb. beef top round steak, cut into 1/4-inch x 2-inch strips
- 1 T. paprika
- 2 T. butter
- 10 1/2 oz. can beef broth/stock
- 2-3 garlic cloves, minced
- 1 medium green pepper, cut into strips
- 1 medium red pepper, cut into strips (or 1/2 medium red and 1/2 medium orange)
- 1 c. thinly sliced onion, yellow or red
- 2 T. cornstarch
- 2 T. soy sauce
- 1/3 c. cold water
- 2 fresh tomatoes, peeled and cut into wedges
- salt and pepper, to taste
- 2 green onions, chopped for garnish, optional
- cooked rice or egg noodles
Steps
- Sprinkle meat with paprika.
- In a large skillet, melt butter over medium-high heat; brown beef; add broth/stock and garlic. Simmer, covered, 30 minutes. Add green peppers and onion. Cover; continue to simmer 5 minutes.
- Combine cornstarch, soy sauce and water; stir into meat mixture; cook; stir until thickened. Gently stir in tomatoes; heat through. Season with salt and pepper, to taste.
