Description
This low carb casserole is a complete meal with hamburger, sausage, vegetables and potatoes in a wonderful cheesy Alfredo sauce. It's a tasty, easy meal that is satisfying and one your family will ask for over and over again.
Ingredients
- 1/2 lb. ground beef
- 1/2 lb. bulk sausage
- 1 t. oregano, dried
- 1 small white onion, chopped
- 3 fresh cloves garlic, minced
- 1 T. fresh parsley, chopped
- 10 - 12 oz fresh broccoli florets
- 1 red or green bell pepper, cut into strips
- 2 potatoes, cut into very thin slices
- 8 oz. block cream cheese, at room temperature
- 1/2 c. half and half (1/4 c. milk and 1/4 c. heavy cream)
- 1/2 c. Parmesan cheese, grated
- 1 t. salt
- freshly ground pepper, to taste
- 8 oz. package shredded Mozzarella cheese, or cheese of your choice
Steps
- Preheat oven to 350 degrees. Grease a large baking dish or pan.
- In a bowl, mix the two meats; season with oregano, salt and pepper.
- In a large skillet over medium heat, place the meat mixture; brown; add the onion, parsley and garlic. Cook 3 minutes; drain/discard excess fat.
