Crock Pot Peach Barbecue Smothered Pork Chops

Description

No more dry pork chops! These crock pot pork chops with a peach sauce come out very tender and succulent. They will make mouth water while cooking. This would also be good with pork tenderloin, pork steaks, or even chicken.

Ingredients

2 bone-in center or boneless cut pork loin chops, about 1 1/2 lb.
2 T. olive oil
1 small Vidalia onion, peeled and chopped
1 large shallot, peeled and minced
3 garlic cloves, smashed
2 ripe peaches, peeled and chopped
dash of water

Sauce:
1/4 c. apple cider vinegar
1/4 c. bourbon
1 T. dark brown sugar
1 T. Worcestershire sauce
1 T. honey
1 t. Dijon mustard
freshly squeezed juice of 1/2 lemon
1 t. salt
1 t. freshly ground black pepper

freshly chopped parsley, for garnish

Season both sides of chops with salt and pepper.

Line a crock pot with a crock pot liner for easy clean up.

Coat skillet bottom with oil; heat on medium-high heat until hot but not smoking. Brown chops on both sides;place in the crock pot.

Lower skillet heat; add onions, shallots, garlic and a dash of water; saute several minutes. Scrape up brown bits from the bottom of the skillet and place them, the onions and all the juices from the skillet into the crock pot. Add the peaches to the crock pot.

Whisk together sauce ingredients; pour over peaches and chops; cook 6-7 hours on Low.

Very carefully remove chops from the cooker. The meat will be very tender and falling off the bone, so use extra care; set aside.

Remove any bone fragments from the remaining liquid; puree in a blender or food processor; taste and adjust seasonings, as desired.

Serve topped with the sauce. Garnish with fresh parsley.
