This Lemon Chicken with fettuccine will become your family's favorite meal, and yours as well. It's refreshing, light, delicious and so easy and quick to make, it can be on the table in about 30 minutes.
8 oz. fettuccine, cooked
2 T. extra virgin olive oil
4 boneless chicken breasts, diced
salt, to taste
black pepper, to taste
7 oz. jar sun-dried tomatoes in oil, drained and roughly chopped (reserve the oil)
1/4 c. loosely packed fresh parsley
Dressing:
2 T. sun-dried tomato oil, reserved from the draining
freshly squeezed juice from 1 lemon
1/8 t. garlic powder
salt, to taste
black pepper, to taste
Cook fettuccine in well salted boiling water, 8-10 minutes; drain; set aside.
Rinse chicken; pat dry; dice.
While fettuccine is cooking, heat olive oil in a large skillet over medium heat; add diced chicken; season with salt and pepper; cook until chicken is browned, stirring occasionally.
Add sun-dried tomatoes and parsley; cook 3 - 4 minutes, or until chicken is thoroughly cooked.
Add cooked fettuccine to chicken; toss together.
In a lidded jar, combine sun-dried tomato oil, lemon juice, garlic powder, salt and pepper; shake until thoroughly mixed. Pour dressing over the pasta; stir.
Season with salt and pepper, to taste. Serve immediately.
