Description
This Lemon Chicken with fettuccine will become your family's favorite meal, and yours as well. It's refreshing, light, delicious and so easy and quick to make, it can be on the table in about 30 minutes.
Ingredients
- 8 oz. fettuccine, cooked
- 2 T. extra virgin olive oil
- 4 boneless chicken breasts, diced
- salt, to taste
- black pepper, to taste
- 7 oz. jar sun-dried tomatoes in oil, drained and roughly chopped (reserve the oil)
- 1/4 c. loosely packed fresh parsley
- Dressing:
- 2 T. sun-dried tomato oil, reserved from the draining
- freshly squeezed juice from 1 lemon
- 1/8 t. garlic powder
- salt, to taste
- black pepper, to taste
Steps
- Cook fettuccine in well salted boiling water, 8-10 minutes; drain; set aside.
- Rinse chicken; pat dry; dice.
- While fettuccine is cooking, heat olive oil in a large skillet over medium heat; add diced chicken; season with salt and pepper; cook until chicken is browned, stirring occasionally.
