Make this healthy grilled broccoli salad while grilliing the rest of your meal on the grill. Broccoli is a wonderful superfood to include in many of your meals.
2 large heads broccoli, cut into bite-sized florets, stems peeled
Garlic Chili Dressing:
⅓ cup neutral tasting oil
4 cloves garlic, thinly sliced
white parts of 2 green onions, finely chopped, reserve greens for garnish
1-2 t. finely chopped red chili, to taste
finely grated zest of 2 lemons
¼ c. freshly squeezed lemon juice
salt, to taste
freshly ground black pepper, to taste
Garnish:
12-16 shavings of Parmesan or Pecorino cheese, shaved with a vegetable peeler
2 T. chopped parsley or coriander leaves/cilantro leaves
Garlic Chili Dressing:
Place oil, garlic, white parts of onion and chili in a small pan; cook over a very gentle heat until garlic is softened but not browned, about 10 minutes. It could also be baked at 300 degrees for 15 minutes. Mix in lemon zest and juice; salt and pepper to taste.
Salad:
Drop broccoli into a large pot of boiling salted water; boil 2 minutes; drain, refresh under cold water; drain again; pat dry. Grill over medium-high heat until tender and lightly charred, about 4 minutes on each side.
To serve:
Toss dressing on broccoli; garnish with shaved cheese, parsley or coriander leaves/cilantro leaves and reserved onion greens. Serve immediately.
