Grilled Broccoli Salad

Description

Make this healthy grilled broccoli salad while grilliing the rest of your meal on the grill. Broccoli is a wonderful superfood to include in many of your meals.

Ingredients

  • 2 large heads broccoli, cut into bite-sized florets, stems peeled
  • Garlic Chili Dressing:
  • ⅓ cup neutral tasting oil
  • 4 cloves garlic, thinly sliced
  • white parts of 2 green onions, finely chopped, reserve greens for garnish
  • 1-2 t. finely chopped red chili, to taste
  • finely grated zest of 2 lemons
  • ¼ c. freshly squeezed lemon juice
  • salt, to taste
  • freshly ground black pepper, to taste
  • Garnish:
  • 12-16 shavings of Parmesan or Pecorino cheese, shaved with a vegetable peeler
  • 2 T. chopped parsley or coriander leaves/cilantro leaves

Steps

  1. Garlic Chili Dressing:
  2. Place oil, garlic, white parts of onion and chili in a small pan; cook over a very gentle heat until garlic is softened but not browned, about 10 minutes. It could also be baked at 300 degrees for 15 minutes. Mix in lemon zest and juice; salt and pepper to taste.
