Description
Make this healthy grilled broccoli salad while grilliing the rest of your meal on the grill. Broccoli is a wonderful superfood to include in many of your meals.
Ingredients
- 2 large heads broccoli, cut into bite-sized florets, stems peeled
- Garlic Chili Dressing:
- ⅓ cup neutral tasting oil
- 4 cloves garlic, thinly sliced
- white parts of 2 green onions, finely chopped, reserve greens for garnish
- 1-2 t. finely chopped red chili, to taste
- finely grated zest of 2 lemons
- ¼ c. freshly squeezed lemon juice
- salt, to taste
- freshly ground black pepper, to taste
- Garnish:
- 12-16 shavings of Parmesan or Pecorino cheese, shaved with a vegetable peeler
- 2 T. chopped parsley or coriander leaves/cilantro leaves
Steps
- Garlic Chili Dressing:
- Place oil, garlic, white parts of onion and chili in a small pan; cook over a very gentle heat until garlic is softened but not browned, about 10 minutes. It could also be baked at 300 degrees for 15 minutes. Mix in lemon zest and juice; salt and pepper to taste.
