Ingredients

Cupcakes:
1 box lemon cake mix
1/2 c. water
1/2 c. vegetable oil
1/2 c. gold tequila (or water)
1 t. grated orange peel
3 eggs
1- 4 serving size box Jell-O™ lime-flavored gelatin

To Brush Tops of Cupcakes:
1 - 2 T. tequila

Frosting:
2- 12 oz. containers whipped fluffy white frosting
1 t. electric green gel food color
2 t. lime extract

Decoration:
1/4 c. coarse white sugar or white decorator sugar crystals
24 thin lime slices from about 3 limes
24 cocktail umbrellas, optional

Preheat oven to 350 degrees or 325 degrees for dark or non-stick pans. Place paper baking cups in each of 24 regular-size muffin cups.

In a large bowl, beat all cupcake ingredients with an electric mixer on low speed 30 seconds. Beat on medium speed 2 minutes, scraping bowl occasionally.

Divide batter evenly among muffin cups. Bake 18 - 22 minutes or until toothpick inserted in center comes out clean.

Allow cupcakes to cool 5 - 10 minutes; remove to a cooling rack. Brush tops with 1- 2 T. tequila. Set cupcakes aside to cool completely before frosting.

In a medium bowl, mix frosting, food color and lime extract together until blended.

Frost cupcakes. Sprinkle sugar on a small plate; roll just the edges of the cupcakes in the sugar. Cut a small slit in lime slices; twist and place on cupcakes. Poke 1 umbrella into each cupcake.

Store loosely covered in refrigerator.

Makes 2 dozen.
