This yummy dish can be ready in about 15 minutes. It is super simple to make with canned tomato soup, cheese filled tortellini, seasonings, vegetable stock/broth and a little half and half. Serve with a salad and crusty bread.
1 t. olive oil
2 cloves garlic, minced or 1/2 t. garlic powder
2 -10 3/4 oz. cans condensed tomato soup
1 1/2 c. milk
2 c. half and half
2 c. vegetable stock/broth (or chicken, if preferred)
1 t. onion powder
1/8 t. lemon pepper, optional
½ t. salt
½ t. pepper
1 t. Italian seasoning
9 oz. package cheese-filled tortellini
freshly shredded Parmesan
Heat olive oil over medium heat; add garlic; cook just until fragrant, about 1 minute. Add tomato soup, milk, half and half, vegetable stock/broth, and all seasonings; bring to a simmer. Once simmering, drop in the tortellini; cook according to package instructions, about 7 - 10 minutes.
Serve hot, with freshly shredded Parmesan cheese on top.
