Make a delicious one dish casserole and your family will love you for it. Chicken, potatoes, bacon, cheese, green onions and a little heavy cream or milk makes the most wonderful meal, similar to a loaded baked potato. Serve with a side salad or a vegetab
4 medium russet potatoes, scrubbed and cubed
1 lb. boneless, skinless chicken breasts, rinsed and diced
5 slices bacon, crisply cooled and crumbled
1 1/2 c. shredded Cheddar cheese, divided
4 green onions, sliced, divided
1/2 t. salt
1/2 t. ground black pepper
1/3 c. heavy cream (or milk)
1- 2 T. unsalted butter, cut into small pieces
1/4 t. salt and pepper
Preheat oven to 350 degrees. Grease a 9 x 9 inch baking pan/dish with non-stick cooking spray.
Layer half of the cubed potatoes on the bottom of the pan; place chicken on top of potatoes; season with salt and pepper. Add 1/2 c. cheese; add half of the crumbled bacon; add 1/2 of the green onions. Spread out remaining potatoes on top, then remaining bacon and green onions; sprinkle with 1/4 t. each salt and pepper; add remaining 1/2 c. cheese. Pour heavy cream (or milk) on top, then dot with butter.
Bake, covered with aluminum foil for 1 1/2 hours; uncover and bake another 30 minutes. The last few minutes of baking, sprinkle the top with the remaining cheese, place back in the oven until melted.
Serve immediately.
