Serve this healthier chicken salad on bread, croissants, in pitas or just on a bed of lettuce. For the best taste, make 1 day in advance.
4 skinless, boneless chicken breast halves, cooked and diced
1 stalk celery, chopped
1/4 red onion, chopped
1 small apple, peeled, cored and chopped
1/3 c. golden raisins
1/3 c. seedless green or red grapes, halved
1/2 c. chopped toasted pecans
1/8 t. ground black pepper
1/2 t. curry powder
3/4 c. mayonnaise
salt, to taste
Wash celery, apple and grapes. Cut of and discard ends of celery; chop. Peel onion; chop. Slice raisins into halves. Toast pecans.
In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix; toss to coat.
Serve.
