Description
Serve this healthier chicken salad on bread, croissants, in pitas or just on a bed of lettuce. For the best taste, make 1 day in advance.
Ingredients
- 4 skinless, boneless chicken breast halves, cooked and diced
- 1 stalk celery, chopped
- 1/4 red onion, chopped
- 1 small apple, peeled, cored and chopped
- 1/3 c. golden raisins
- 1/3 c. seedless green or red grapes, halved
- 1/2 c. chopped toasted pecans
- 1/8 t. ground black pepper
- 1/2 t. curry powder
- 3/4 c. mayonnaise
- salt, to taste
Steps
- Wash celery, apple and grapes. Cut of and discard ends of celery; chop. Peel onion; chop. Slice raisins into halves. Toast pecans.
- In a large salad bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix; toss to coat.
- Serve.
