Use this thick, delicious, spicy but sweet, tangy, and bacon flavored BBQ sauce on ribs, hamburgers, hot dogs, chicken, pork steaks, or however you use any BBQ sauce.
Sauce:
1/2 lb. bacon, chopped into 1inch pieces
1 medium onion, finely chopped
2 T. garlic, minced
4 plum tomatoes, chopped
1/3 c. whiskey (Jack)
4 T. Worcestershire sauce
2 c. ketchup
1⁄3 c. apple cider vinegar
3 T. dark brown sugar
1 t. espresso powder or 1⁄2 c. strong coffee
1/2 c. honey
1/2 c. pure maple syrup
2 T. spice rub-see below
Spice Rub:
2 T. sea salt
1 T.l celery salt
1 T. smoked paprika
2 t. ground cumin
2 t. garlic powder
1 T. freshly ground black pepper
1 t. ground cayenne pepper
2 t. mustard powder
4 T. dark brown sugar
Heat a large Dutch oven or heavy-bottom pot over medium heat; add the bacon. Cook, stirring, until the bacon is browned and crispy. Add onion, garlic, tomato, and spice mix; continue cooking, stirring occasionally, 8 minutes or until the onion begins to soften. Add remaining ingredients; bring to a low simmer; cover; cook, stirring occasionally, 30 minutes. Remove from stove; allow to cool. Transfer to a covered glass container; store in the refrigerator.
