Make a homemade soup that is simple and quick to make, that is healthy and delicious as well. It is loaded with protein and vegetables and is so good, you will make it one of your go to soups in the future.
1 T. olive oil
1 lb. ground Italian sausage (spicy, mild, sweet or combination)
1 yellow onion, diced
4-5 cloves garlic, minced
¾ t. dried oregano
¾ t. dried basil
¼ t. crushed red pepper flakes
¼ t. paprika
¼ t. salt
½ t. freshly ground black pepper
1 bay leaf
8 c. low-sodium chicken stock/broth
2 small russet potatoes, cubed
1 c. dry green lentils
1 c. quartered cherry tomatoes
1 zucchini, thinly sliced
3 c. fresh spinach
In a large stock pot over medium heat, add the oil; when hot, add sausage; cook until browned, about 5 minutes; drain and discard excess fat.
Stir in garlic and onion; cook until fragrant. Sprinkle in oregano, basil, red pepper flakes, paprika, salt and pepper. Add bay leaf; pour in the chicken stock/broth; bring to a boil; add potatoes and lentils; cook 10 minutes; add tomatoes and zucchini; continue simmering for 15 minutes or until the lentils are tender. Stir in the spinach; wilt about 2 minutes. Remove bay leaf.
Garnish with Parmesan cheese, if desired. Serve immediately.
