Description

Serve this delicious, cheesy and garlicky shrimp and pasta bake in a homemade Alfredo sauce anytime. It's easy to make and so good, it can be served on special occasions.

Ingredients

• 10 oz. penne pasta
• 3 T. butter, divided
• 3-4 cloves garlic, minced
• 1 lb. medium or large shrimp, peeled and deveined
• 3 T. chopped fresh parsley, divided
• 2 T. all-purpose flour
• 3/4 c. milk
• 1/4 c. low-sodium chicken stock/broth
• 1 c. shredded mozzarella, divided
• 1/4 c. + 2T. shredded Parmesan cheese, divided
• salt, to taste
• freshly ground black pepper, to taste
• 2 large tomatoes, chopped (about 1 c.)

Steps

1. Preheat oven to 350 degrees.
2. In a large pot of well salted boiling water, cook pasta according to package directions until al dente; drain; return to pot; cover to keep warm.
3. Meanwhile, in a large ovenproof skillet over medium heat, melt 1 T. butter; add garlic, shrimp, and 2 T. parsley; season with salt. Cook until shrimp is pink and no longer opaque, 2 minutes per side. Transfer shrimp to a plate/platter, keeping all juices in skillet.
