Cheesy Beef Taco Dip

Description

This is an amazingly dip . Make it in the crockpot,if you'd like, adding the cooked, seasoned beef from the skillet to the cheese and tomatoes in the crock. Cook all day on Low or about an hour on High, then add the toppings at the end.

Ingredients

2 lb. pasteurized cheese, like Velveeta cheese
2 -10 oz. cans diced tomatoes with chilies, and their juices (Ro-tel)
1 lb. ground beef
1 package taco seasoning, your favorite and water as directed on package

Toppings:
½ c. black beans
½ c. pico de gallo
1/3 c. sour cream
1 c. guacamole, home made or store bought

½ c. cilantro, optional

Combine cheese and tomatoes in a saucepan; heat until melted; stirring often.

Brown ground beef in a skillet; drain and discard any fat; add taco seasoning and water; stir; simmer a few minutes as directed on taco seasoning package.

Pour cheese mixture into a large serving bowl. Carefully place the seasoned beef in the middle of the cheese mixture, making an island in the center of the cheese.

Carefully top the beef in this order: black beans, pico de gallo, sour cream, guacamole, and fresh cilantro, if using.

Serve with tortilla chips, tortilla scoops or Fritos scoops.
