Fattoush Mediterranean Salad

Description

Fattoush is a Levantine or Mediterranean bread salad prepared with fried or toasted chunks of pita bread with large chunks of vegetables and mixed greens and tasty herbs.The lemon juice and sumac dressing give it a tangy, sour taste.

Ingredients

1 pita bread round
1 T. olive oil
pinch onion salt
2 ripe tomatoes
handful of cherry tomatoes
2 small Persian cucumbers, sliced into bite-sized chunks
1/2 small red onion, thinly sliced
several radishes, sliced or cut into wedges
2 oz. feta cheese, cut in small chunks
handful of cured black olives, pitted
large handful parsley leaves, chopped
small handful of mint leaves, rough chopped or torn

Dressing:
4 T. olive oil
3 T. freshly squeezed lemon juice
1 t. sumac
pinch of salt

Cut pita bread into 1 inch squares; carefully separate the two layers of the bread, so you are left with single layer squares; toss with olive oil and onion salt until evenly coated.

Toast pita in a large skillet over medium heat until brown and crisp, stirring and flipping constantly, keeping them in a single layer to toast evenly; remove and set aside.

Wash and chop tomatoes into bite-sized chunks; cut in halves or quarters; place in a large bowl.

Wash cucumbers; slice into bite-sized chunks, not peeling them unless using a regular cucumber. If using a regular cucumber, peel and de-seed it first.

Wash radishes and slice them; peel and slice the onions. Add the onions, radishes, cheese, and olives to the bowl, with fresh parsley and mint.

Whisk together dressing ingredients; adjust to taste. If preferring it less tangy, add more oil. Toss salad in just enough dressing to moisten.

Right before serving, garnish with the toasted pita chunks.
