Red Onion Gratin

Description

Onions are not usually the star side dish of your dinner, but they will be with this fantastic onion gratin. It's quick and simple to make and so delicious, you'll wish that you had made it sooner.

Ingredients

2 red onions (Vidalia or yellow would be good as well)
olive oil
2 T. unsalted butter, divided
1 T. all-purpose flour
2/3 c. heavy cream
3 T. dry sherry
salt, to taste
garlic powder, optional
freshly ground black pepper
dash of nutmeg
handful of fresh thyme
1 c. shredded Gruyere cheese
1/2 c. fresh breadcrumbs

Preheat oven to 400 degrees.

Peel onions; slice thickly.

Heat a grill pan until very hot; brush onion slices lightly with olive oil; grill 1-2 minutes on each side until slightly softened and have nice grill marks. Set aside.

In a saucepan, heat 1 T. butter over medium heat; stir in flour; cook 1 minute, stirring constantly. Pour in cream and sherry; whisk until smooth, stirring constantly while mixture comes up to a simmer and is thickened. Add nutmeg, garlic powder, salt and pepper, to taste.

Pour sauce into a cast iron skillet or a gratin dish; place onion slices over the sauce;
sprinkle the cheese evenly over everything.

Stir breadcrumbs with the remaining melted butter; add salt, pepper, and a few thyme leaves; sprinkle breadcrumbs over the cheese.

Bake about 20 minutes or until browned and bubbling. If desired, place the gratin under the broiler at the last minute if wanting extra browning.
