Parmesan Brussels Sprouts

Description

Even people who don't like brussels sprouts should at least try this delicious recipe. What a wonderful side dish.

Ingredients

  • 1/2 c. vegetable oil
  • 1 c. Panko
  • 1/3 c. freshly grated Parmesan cheese
  • 1 T. Cajun seasoning
  • 1 lb. brussels sprouts, trimmed and sliced in half
  • 1/2 c. all-purpose flour
  • 2 large eggs, beaten

Steps

  1. Heat vegetable oil in a large skillet over medium high heat.
  2. In a large bowl, combine Panko, Parmesan cheese and Cajun seasoning; set aside.
  3. Working in batches, first dredge brussels sprouts in flour, then dip into eggs, then dredge in Panko mixture, pressing to coat.
