Even people who don't like brussels sprouts should at least try this delicious recipe. What a wonderful side dish.
1/2 c. vegetable oil
1 c. Panko
1/3 c. freshly grated Parmesan cheese
1 T. Cajun seasoning
1 lb. brussels sprouts, trimmed and sliced in half
1/2 c. all-purpose flour
2 large eggs, beaten
Heat vegetable oil in a large skillet over medium high heat.
In a large bowl, combine Panko, Parmesan cheese and Cajun seasoning; set aside.
Working in batches, first dredge brussels sprouts in flour, then dip into eggs, then dredge in Panko mixture, pressing to coat.
Add brussels sprouts to the skillet, 5 - 6 at a time; cook until evenly golden and crispy, about 2-3 minutes. Transfer to a paper towel-lined plate.
Serve immediately, with a little Ranch dressing, if desired.
