Baking sweet potatoes is simple and only takes a little bit of time in the oven. A little bit of salt and butter and you have a delicious side dish for any meal.
2 large sweet potatoes
2 T. butter, divided
1/4 t. kosher salt, divided
Preheat oven to 400 degrees. Cover a rimmed baking pan/sheet with foil.
Scrub sweet potatoes and pat dry. With a fork, pierce the sweet potatoes all over; place potatoes on prepared baking sheet; bake until fork tender, 45-60 minutes.
Remove from oven. With a sharp knife, cut down the center of each sweet potato, gently squeeze the ends to open. Top each sweet potato with 1 T. butter and 1/8 t. salt.
TIP: Sweet potatoes caramelize better if NOT wrapped in foil.
