Are you wanting a new slow cooker recipe for dinner? Try this white, cheesy chicken lasagna made easily in your slow cooker. It has chicken, three different cheeses, uncooked lasagna noodles and your favorite Alfredo sauce.
2 c. shredded or diced cooked chicken (left over or rotisserie chicken, if desired)
15 oz. container Ricotta cheese, whole or part skim
8 oz. cream cheese
1 c. shredded Parmesan cheese, divided
1 t. Italian seasoning
2½ c. Alfredo sauce, homemade or store-bought, divided
9 uncooked lasagna noodles
Stir together chicken, Ricotta cheese, cream cheese, ½ cup Parmesan cheese, and Italian seasoning.
Line the bottom of the slow cooker with a slow cooker liner for easy clean up. Lightly grease the liner in the slow cooker. Spread ½ c. Alfredo sauce in the bottom of the cooker. Top with 3 lasagna noodles, broken to fit into the slow cooker. Spread 1/2 of the chicken mixture over the noodles; layer with 3 more lasagna noodles. Pour 1/2 of the remaining sauce over the chicken mixture. Top with 3 more noodles, breaking them as needed; spread on the remaining chicken mixture and remaining noodles.
Spread remaining sauce over the noodles; sprinkle with the remaining Parmesan cheese.
Cover; cook on Low 3-4 hours.
Sprinkle with chopped parsley, if desired. Serve.
