Deep fried mushrooms make a great side dish to go along with meal. It takes less than 30 minutes to make them. Serve them as a side dish, or even an appetizer.
2 c. oil, for frying
1 c. all-purpose flour
1⁄2 c. cornstarch
3⁄4 t. baking powder
1⁄4 t. salt
1 c. water
2 c. panko breadcrumbs
10 oz. fresh white mushrooms or portabella mushrooms, wiped clean
Heat oil in a deep fryer or a large skillet to 375 degrees.
Mix together flour, cornstarch, baking powder and salt in a bowl; pour in and stir water until batter is smooth.
Pour panko breadcrumbs in a separate shallow bowl.
Dip each mushroom in the batter, holding it over the bowl to allow any excess to drip off; roll in panko breadcrumbs to coat. Repeat with remaining mushrooms.
Working in batches, fry mushrooms for 3 - 5 minutes or until golden brown. Transfer to a paper towel lined plate to drain.
