Holiday parties call for finger foods and appetizers. This is a surprisingly easy and quick one to prepare. It's so elegant looking, with little hot, melted chunks of Brie inside of puff pastries. Serve them hot with apricot or different jams.
1 sheet frozen puff pastry, thawed
flour
16 mini Brie rounds (available at Trader Joe's)
1 egg beaten with 1 T. water, for brushing
apricot or raspberry jams, or your favorite jam
Preheat oven to 400 degrees.
When puff pastry has thawed, lay it out on a floured surface. Roll it out gently into a 12 x 12 square, using your hands at the end to get it just right. Cut the sheet into sixteen 3 inch squares.
Place a Brie round in the center of each square; bring up the corners to meet in the center. You might have to do a little stretching. It won't tear the dough. Twist the ends together to secure.
Place the pastries on a parchment or silicone lined baking sheet; lightly brush them with the egg mixture.
Bake 20-25 minutes until pastries are golden brown.
Serve hot with your favorite jams.
