Mini Brie en Croute with Jam

Description

Holiday parties call for finger foods and appetizers. This is a surprisingly easy and quick one to prepare. It's so elegant looking, with little hot, melted chunks of Brie inside of puff pastries. Serve them hot with apricot or different jams.

Ingredients

  • 1 sheet frozen puff pastry, thawed
  • flour
  • 16 mini Brie rounds (available at Trader Joe's)
  • 1 egg beaten with 1 T. water, for brushing
  • apricot or raspberry jams, or your favorite jam

Steps

  1. Preheat oven to 400 degrees.
  2. When puff pastry has thawed, lay it out on a floured surface. Roll it out gently into a 12 x 12 square, using your hands at the end to get it just right. Cut the sheet into sixteen 3 inch squares.
  3. Place a Brie round in the center of each square; bring up the corners to meet in the center. You might have to do a little stretching. It won't tear the dough. Twist the ends together to secure.
