Simple and quick complete meals are the way to go for dinner. This dinner is baked in just one foil lined baking pan, so clean up is a snap. Change the ingredients according to what is in season or to your personal taste.
Ingredients
- 1 package skinless smoked sausage, (sliced) like Eckrich sausage
- 8 Yukon gold potatoes, scrubbed and quartered
- 1 green pepper, diced
- 1 yellow pepper, diced
- 2 T. butter, cut into small cubes
- 2 t. olive oil
- 1 t. oregano
- 1 t. basil
- ½ t. black pepper
Steps
- Preheat oven to 375 degrees. Line a baking pan with aluminum foil.
- In the prepared pan, arrange sausage, potatoes and peppers in a single layer; place butter cubes over the top; drizzle with olive oil; sprinkle seasonings on top.
- Bake covered with aluminum foil 40 - 50 minutes.
