Roll up a few tortillas stuffed with cream cheese, bell peppers, scallions, bacon and Ranch dressing mix. Refrigerate, slice and serve. That's it!
4 12-inch tortillas
2 8-oz. packages cream cheese, softened
½ c. finely chopped red bell pepper or red and green bell peppers
scant ½ c. finely chopped scallions or green onions
⅓ c. finely chopped cooked bacon
3 T. Ranch dressing mix from a packet
In a large bowl, combine cream cheese, red bell pepper, scallions, bacon and ranch mix.
Spread mixture evenly over all tortillas. Roll each tortilla up tightly, then wrap in plastic wrap. Chill for several hours or overnight.
When ready to serve, unwrap the roll-up from plastic wrap. Slice.
