Description
Roll up a few tortillas stuffed with cream cheese, bell peppers, scallions, bacon and Ranch dressing mix. Refrigerate, slice and serve. That's it!
Ingredients
- 4 12-inch tortillas
- 2 8-oz. packages cream cheese, softened
- ½ c. finely chopped red bell pepper or red and green bell peppers
- scant ½ c. finely chopped scallions or green onions
- ⅓ c. finely chopped cooked bacon
- 3 T. Ranch dressing mix from a packet
Steps
- In a large bowl, combine cream cheese, red bell pepper, scallions, bacon and ranch mix.
- Spread mixture evenly over all tortillas. Roll each tortilla up tightly, then wrap in plastic wrap. Chill for several hours or overnight.
- When ready to serve, unwrap the roll-up from plastic wrap. Slice.
