Description
These chicken roll-ups are so quick to prepare and delicious. Make them easier with rotisserie chicken and pre-sliced packaged cilantro and green onions, if you are short on time.
Ingredients
- 2 - 8 oz. containers light cream cheese soft spread
- 1 chilled rotisserie chicken, shredded (2 cups) or left-over chicken breasts
- 1/2 c. fresh cilantro, finely chopped
- 1/2 c. sliced green onions
- 10 oz. can diced tomatoes with chiles, well drained
- 1 1/2 c. shredded Mexican taco cheese blend
- 2 T. taco seasoning
- 8 burrito-size (10-inch) flour tortillas
Steps
- Place cheese spread in medium bowl; divide into small pieces to soften. Shred 2 cups of chicken breast meat. Chop cilantro.
- Add all ingredients, except for the tortillas, to the cheese spread; mix with electric mixer until blended.
- Spread mixture evenly over each tortilla; roll up tightly. Place on a baking sheet with the seam-sides down; chill 15 minutes or until chilled.
