Ingredients

Cookies:
3/4 c. butter, softened
1/2 c. powdered sugar
1/4 t. peppermint extract
2 (1-ounce) squares unsweetened baking chocolate, melted, cooled slightly

1 1/2 c. all-purpose flour
1 c. mini semi-sweet chocolate chips

Frosting:
1 c. powdered sugar
2 T. butter, softened
1 T. milk
1/4 t. peppermint extract
1 drop green food color (no more than 1 drop)

Drizzle:
1/2 c. mini semi-sweet chocolate chips
1/2 t. vegetable shortening

Preheat oven to 375 degrees.

Cookies:
Combine all cookie ingredients except for the flour and 1 c. mini chocolate chips in a bowl; beat on medium speed until creamy; add flour; beat at low speed until mixture forms a dough. Stir in the 1 c. mini chocolate chips.

Shape dough into 1 inch balls; place balls 2 inches apart onto un-greased cookie sheets; flatten balls to 1 1/2-inch circles with the bottom of a glass that has been dipped in flour.

Bake 5-7 minutes or until set. (DO NOT 0VER-BAKE.) Cool 2 minutes on cookie sheets; transfer to a cooling rack.

Frosting:
Combine all frosting ingredients in bowl; beat on low speed until smooth. (Add additional milk, 1 t. at a time, for desired consistency.) Frost cooled cookies; place cookies onto waxed paper.

Drizzle:
Place 1/2 c. mini chocolate chips and shortening in bowl; microwave 60-90 seconds, stirring every 30 seconds, or until smooth. Drizzle thin lines of chocolate over frosting with a teaspoon, or place melted chocolate in a small resealable plastic food bag; cut a tiny tip off one corner of bag, then drizzle the chocolate.

Let stand 30 minutes or until chocolate is set.

**Change the icing color for different holidays, like green for St. Patrick's Day, pink, blue and yellow for Easter, orange for Halloween, red and or green for Christmas, pink and red for Valentine's Day, etc.
