Description
Don't feed your family those pre-packaged frozen breakfast tortillas when you can quickly and easily make your own. Fill your flour tortillas with ham, eggs, cheese and a little bit of chopped scallions. Serve with salsa, hot sauce and/or sour cream.
Ingredients
- 1 T. unsalted butter
- 2 c. chopped deli ham
- 6 large eggs, beaten
- 3 T. half and half
- salt, to taste
- black pepper, to taste
- 4 scallions, diced
- 12 - 6 inch flour tortillas
- 1 1/2 c. shredded Colby Jack, Pepper Jack cheese or Mexican cheese
- non-stick cooking spray
- Kosher salt
- salsa or hot sauce, for serving
- sour cream, for serving
Steps
- Preheat oven to 425 degrees. Line a baking sheet with foil sprayed with non-stick cooking spray.
- Heat butter in a large non-stick skillet over medium high heat; add ham; sauté until starting to crisp. Add eggs and half and half; stir to scramble. Season with a bit of salt and pepper, to taste.
- Transfer to a medium mixing bowl; stir in scallions.
