Amish Macaroni Salad

Description

This recipe is the best macaroni salad ever! Even people who aren't pasta salad lovers will like it. Make it for a crowd or cut the recipe in half for your family.

Ingredients

1 lb. macaroni or small shells
1⁄2 c. finely chopped celery
1⁄2 c. finely grated carrot
1⁄4 c. finely chopped or grated onion
1⁄4 c. chopped green pepper, optional
6 hard-boiled eggs (5 chopped and 1 reserved to slice for garnish)
paprika, for garnish

Dressing:
2 c. Miracle Whip
1⁄4 c. vinegar
3⁄4 c. sugar
2 T. prepared mustard

Cook macaroni as directed on package in well salted boiling water, about 7 minutes; drain; cool.

In a bowl, whisk together the dressing ingredients until well-combined and smooth.

In a large serving bowl, gently combine cooked macaroni, celery, carrots, onions and 5 chopped eggs. Fold the dressing gently into the macaroni mixture.

Garnish with the reserved slice egg and paprika.

Refrigerate covered overnight for best results.
