Make cornbread the way grandma use to with this fabulous recipe. It's sweet and moist, and so delicious.
1/2 c. butter
2/3 c. white sugar
2 eggs
1 c. buttermilk
1/2 t. baking soda
1 c. cornmeal
1 c. all-purpose flour
1/2 t. salt
Preheat oven to 375 degrees. Grease an 8 x 8 inch pan.
Melt butter in large skillet; remove from heat; stir in sugar. Quickly add eggs; beat until well blended.
In the same skillet, combine buttermilk with baking soda; stir into mixture in prepared pan. Stir in cornmeal, flour, and salt until well blended and few lumps remain. Pour batter into the prepared pan.
Bake 30 - 40 minutes, or until a toothpick inserted in the center comes out clean.
8-9 servings.
