What did people serve on their salads before bottled salad dressings were available in stores? They made wilted salad with hot bacon grease, sugar, vinegar, salt and pepper. It's easy to make, you know all of the ingredients and it tastes so good!
4 hearts romaine, chopped (or iceberg lettuce)
4 slices bacon
2 T. granulated sugar
1/4 c. vinegar
salt
freshly ground black pepper
Place lettuce in a serving bowl.
In a skillet over medium heat, cook bacon until crispy; transfer bacon to a paper towel lined plate; cool; crumble over greens.
To the skillet, add sugar and vinegar; simmer until sugar is dissolved, scraping up bacon bits on the bottom of the skillet. Season with salt and pepper, to taste.
Pour hot salad dressing over greens; toss.
Serve immediately.
