Use those left-over mashed potatoes to make a great new side dish. They will soft on the inside and crispy on the outside. Each time that you make them, try a variation like garlic mashed potatoes, a different kind of cheese or meat.
butter flavored cooking spray
1/2 c. chopped green onions
2 c. left-over mashed potatoes, chilled
2 T. shredded extra sharp Cheddar cheese
1/8 t. salt
1/8 t. freshly ground black pepper
1 center-cut bacon slice, cooked and crumbled
3/4 c. panko breadcrumbs
Preheat oven to 425 degrees. Coat a baking sheet with non-stick cooking spray.
Heat a large non-stick skillet over medium heat; coat skillet with non-stick cooking spray. Add green onions; cook 2 minutes or until tender, stirring occasionally. Remove from heat.
Place mashed potatoes in a medium bowl; stir in onions, cheese, salt, pepper, and bacon. Divide potato mixture into 6 equal portions, shaping each into a 1/2-inch-thick patty.
Place panko in a shallow dish; dredge patties through panko. Place patties on the prepared baking sheet. Bake for 12-15 minutes. Carefully flip patties over; bake an additional 12-15 minutes or until golden.
