Spinach Artichoke Chicken Swirls

Make these for your next party or gathering. Puff pastry is loaded with chicken, artichoke hearts, red peppers and yummy spinach dip to make the perfect yummy appetizers that everyone will love.

Ingredients

2 c. boneless, skinless chicken breasts, cooked and shredded
1 c. artichoke hearts, chopped
1/2 c. red peppers, finely chopped
1 c. spinach dip, homemade or store bought (low-fat is fine)
2 sheets of puff pastry, about 12 x 10 inches

Preheat oven to 400 degrees. Line a baking sheet with parchment paper.

Toss shredded chicken in with artichoke hearts and red peppers; stir in the spinach dip.

Divide the chicken mixture between the 2 puff pastry sheets; spread evenly to the edges. Roll into a log; cut each log into 15 rounds. Arrange the rounds on the prepared baking sheet.

Bake 20 - 25 minutes or until the pastry is golden. Cool 5 minutes before serving.

*TIP: Pie pastry is a great substitute for puff pastry.
