Roasted Mushrooms with Herbs

Description

Tailor this basic recipe for roasted mushrooms to your own taste. It's a very simple, flexible recipe. Roast for a longer or shorter time, or mix with garlic and shallots before roasting, or drizzled with sesame or walnut oil at the end.

Ingredients

  • 3/4 lb. cremini mushrooms, wiped off and sliced
  • 1/4 lb. shiitake mushrooms, wiped off and sliced
  • salt, to taste
  • freshly ground pepper, to taste
  • 1/4 c. olive oil
  • 1/2 c. loosely packed fresh herbs like chives, thyme, marjoram, and parsley, minced
  • sour cream, for garnish

Steps

  1. Preheat oven to 475 degrees. Line a large baking sheet with parchment paper.
  2. Toss mushrooms into a large bowl; add a generous amount of salt, pepper and 1/4 c. olive oil. Place mushrooms on the baking sheet.
  3. Roast for 20 minutes; toss the mushrooms once; return to the oven. Roast for an another 10 minutes, or until dark and slightly shrunken.
