Make this fantastic, easy, delicious appetizer for your next gathering. It's like a bruschetta, but is served on crackers instead. It's a little sticky from the balsamic glaze and is both sweet and tart.
¼ c. balsamic vinegar
1 T. shallots, finely chopped
1 c. tomatoes, insides removed and finely chopped
1 c. mozzarella cheese, chopped (place in the freezer for about 30 minutes prior to cutting, to firm it up)
1 T. freshly chopped basil or more, if desired
Ritz crackers, for serving
Add balsamic vinegar to a small saucepan; cook over medium heat, for about 8 minutes. The balsamic vinegar will become a thick and will be reduced down to about 1 T. Set aside; let cool.
Add chopped shallots to a small bowl. Cut and remove all seeds and juice from the inside of the tomatoes; finely chop tomatoes; add to the bowl. Add the chopped mozzarella to the bowl, with the tomatoes and shallots.
Cut or tear enough fresh basil to fill up a tablespoon; place it in the salsa; stir. Add the 1 T. balsamic glaze (it will be thick) to the salsa; stir to combine.
Serve with Ritz Crackers.
Make 2 cups.
*If you are a balsamic glaze lover, you may want to double it to drizzle more on the crackers.
