Serve these roll-ups for breakfast, brunch, or dinner or even as a snack or an appetizer. They are easy to make and can be made in a jiffy.
10 eggs
2 t. garlic powder
kosher salt
freshly ground black pepper
2 T. butter
1 1/2 c. shredded Cheddar cheese
1 c. baby spinach
1 c. chopped tomatoes
20 ham slices
Preheat broiler.
In a large bowl, crack eggs; whisk them together with garlic powder, salt and pepper.
In a large non-stick skillet over medium heat, melt butter; add eggs; scramble, stirring occasionally, 3 minutes. Stir in cheese until melted; stir in baby spinach and tomatoes until combined.
Place 2 ham slices on a baking sheet or dish; top with a big spoonful of scrambled eggs; roll up. Repeat with remaining ham and scrambled eggs.
Broil until ham is crispy, about 5 minutes.
