Description
These yummy chicken salad bites will be a hit at your next party or potluck. They're quick to prepare and so delicious with their sweet flavor and crunchy goodness all served in a flakey wanton cup.
Ingredients
24 wonton wrappers
1/4 c. plain Greek yogurt
2 T. mayonnaise
¾ t. dry tarragon
½ t. salt
1 c. left-over cooked chopped boneless skinless chicken breast or rotisserie chicken, chilled
½ c. finely chopped celery
3 T. dried cranberries
3 T. chopped toasted walnuts
2 T. chives plus more for garnish, if desired
freshly ground black pepper
Directions
Preheat oven to 350 degrees.
Line muffin tins with wonton wrappers. Bake until golden brown following package directions, about 8-9 minutes.
Whisk yogurt, mayonnaise, tarragon and salt in a large bowl. Add chicken, celery, cranberries, toasted walnuts and chives; stir.
Spoon a small amount of chicken salad into the wonton cups, dividing evenly.
Garnish with additional chives if desired; sprinkle with freshly ground black pepper.
Serve.
