This recipe is great to make when you don't have much time but still want a delicious side dish. It's so simple to prepare plus you probably already have most of the ingredients on hand.
4 T. stick butter
1 small sweet onion, cut into thin wedges
1 medium regular red potato, unpeeled, 1/2 - 3/4" dice
¼ t. freshly ground black pepper
3 strips crisply cooked bacon, thinly sliced
½ t. finely minced garlic, from 1 small clove
1 T. dry Hidden Valley Ranch Salad Dressing or Dips Mix
14.5 oz. can green beans, drained*
black pepper, to taste
salt, if desired after tasting
In medium saucepan or small skillet, melt butter; add onion and potato; season with black pepper. Cover; sauté over medium heat until potatoes are fork tender, stirring occasionally. Add bacon, garlic, and Ranch mix; stir.
Fold in green beans; heat through, simmering, occasionally stirring very gently. Season with black pepper, to taste. Add salt only if needed, since the Ranch Mixes are very salty.
4 servings.
* Fresh green beans would be fantastic in this dish, but pre-cook them first.
