This cherry dessert is so quick and simple to make, you'll be amazed. It's a yummy, mouth watering dessert that would be perfect year round, like for Memorial Day, 4th of July, Labor Day or other special events.
1- 1 1/2 c. vanilla wafer crumbs
1 c. finely chopped pecans
1 c. butter
8 oz. cream cheese, softened
1 c. powdered sugar
16 oz. Cool Whip, divided (more may be needed)
2 small boxes instant cheesecake flavored pudding mix
3 c. milk
1 can cherry pie filling (or favorite)
½ c. chopped pecans
Preheat oven to 350 degrees.
Melt butter.
In a medium mixing bowl, combine vanilla wafer crumbs, finely chopped pecans, and melted butter; press into a 9 x 13 inch baking pan; bake for 15 minutes. Remove from oven; cool.
In a separate mixing bowl, combine cream cheese, powdered sugar, and 1½ c. whipped topping; mix until smooth; spread evenly over cooled crust.
Combine cheesecake pudding mix, milk, and 1½ c. whipped topping; mix until smooth; spread evenly over cream cheese layer in pan.
Top with cherry pie filling, remaining whipped topping, and chopped pecans.
