Your family will ask you to make this BBQ chicken bake over and over again because it's so delicious. You will want to make it over and over again because it's so quick and easy to make. That is a win-win situation!
1 lb. boneless skinless chicken breasts, cut into 1 inch pieces (or more, if desired)
16.3 oz. can Pillsbury™ Grands!™ Homestyle refrigerated original or buttermilk biscuits
18 oz. bottle BBQ sauce
2 c. shredded mozzarella cheese (8 oz.)
1/3 c. crisply cooked bacon, crumbled, optional
3 T. freshly chopped green onions or cilantro, optional
Preheat oven to 350 degrees. Spray a 13 x 9 inch (3 qt.) glass baking dish with a non-stick cooking spray.
Heat a 10 inch non-stick skillet over medium-high heat. Add chicken; cook 10 minutes, stirring occasionally, until no longer pink in center; remove from heat. Cool about 5 minutes.
While chicken is cooking, separate dough into 8 biscuits; cut each biscuit into 8 pieces; set aside. (Keep biscuits cold to make cutting easier.)
Place cooked chicken in a medium bowl; pour BBQ sauce over chicken; stir; add biscuit dough pieces to chicken mixture; gently toss to combine. Spread mixture evenly in baking dish; sprinkle cheese over the top.
Bake 25 - 30 minutes or until biscuits are golden brown and cheese is melted. Cooking time may vary with different ovens.
Sprinkle crumbled bacon, green onions or cilantro over the top, if desired. Serve hot.
